Two Greek classics, two different methods. Gyros is layers of marinated meat stacked on a vertical rotisserie, slow-roasted as it turns, then shaved thin to order.
Souvlaki is chunks of chicken or lamb threaded onto a skewer and chargrilled over heat — smoky edges, tender middle. Both come in a wrap or on a plate.
Finely ground, simmered slow in the briki and served with the foam — the kaimaki — still on top.
